Dumpster Diving Gone Luxe

Meet Brynn and Jasper, Brooklyn’s most notorious zero-waste power couple and the founders of *Forage & Found*, a reservation-only fine dining experience where every ingredient is salvaged, reimagined, and previously deemed “inedible by the cowardly.” Guests are served on reclaimed wood palettes with utensils made from discarded bike spokes, and the waiting list is now three months long.
“We’re here to de-stigmatize discarded gastronomy,” Brynn explained while garnishing a ‘fermented dumpster tartare’ with edible cigarette ash and a drizzle of expired tahini. “Food waste is the real crime. Not eating from the back of Whole Foods is the privilege we’re dismantling.”
Courses include wilted kale consomme, bruised avocado foam, and a seared bagel top resting on a cushion of day-old pasta. “It’s about texture, contrast, and violating expectations,” Jasper added. “We source exclusively from artisanal trash bins.”
Each night begins with a ceremony in which diners must separate their phones from their egos in a silk-lined compost bucket before being blindfolded and led past curated piles of post-capitalist refuse to the main dining area, which is lit by solar-powered desk lamps found during a Bed Bath & Beyond liquidation.
“The ambiance is divine,” gushed one influencer. “I never realized how sensual a moldy peach could be. I’ve never felt more connected to the ecosystem or more romantically challenged by a radish.”
Though reviews are mixed–*Eater* called it “Michelin meets microbial hazard”–the couple has cultivated a cult following. Their signature dessert, a bread pudding made from orphaned hamburger buns and regret, is now being pitched to Netflix as the basis for a competitive cooking series titled *Top Bin.*
Health inspectors have visited seven times. Brynn calls them “curators of outdated fear.” Jasper offers guests immunity shots made from expired Emergen-C and juiced celery tape. “It’s all part of the experience,” he said. “Food isn’t spoiled–it’s misunderstood.”
The next step for *Forage & Found*? A traveling dinner series across America’s forgotten alleys, with VIP packages that include “Dumpster Diving 101,” designer hazmat suits, and one-on-one time with Jasper to discuss the socioeconomic ethics of rot.
